Ingredients:
1 3/4 cups flour
2/3 cup brown sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 eggs
3/4 cup orange juice
1/2 cup sour cream
1/4 cup vegetable oil
1 tablespoon orange zest
1 1/2 teaspoons vanilla
Directions:
Combine flour, brown sugar, baking powder and salt.
Add egg, orange juice, sour cream, vegetable oil, orange peel and vanilla.
Stir until just mixed.
Fill paper-lined or well greased muffin cups 2/3 full.
Bake at 350 degrees for 23-25 minutes.
