Ingredients:
1 (8 ounce) cans crushed pineapple
1 cup sour cream
1 eggs
1/4 cup butter, melted
1 1/2 cups all-purpose flour
1 cup old fashioned oats or 1 cup quick oats
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup raisins
Directions:
In a small bowl, combine undrained pineapple, sour cream, egg and butter until blended.
In large bowl, combine remaining ingredients.
Make a well in the center.
Pour in pineapple mixture.
Stir until just mixed.
Spoon into greased 2 1/2 inch muffin cups.
Bake in 350 deg F oven for 30-35 minutes until lightly browned and a wooden toothpick inserted in center comes out clean.
Serve warm.
