Ingredients:
1 1/2 cups flour ( can be partially whole wheat)
1/4 cup toasted wheat germ
2 1/4 teaspoons baking powder
1/3 cup shortening
2/3 cup sugar
1 teaspoon fresh lemon zest
1 -2 eggs, beaten
1 cup very ripe bananas, mashed
1/2 cup chopped nuts

Directions:
Preheat oven to 350F and grease bread pan.
(8 1/2 X 4 1/2) All ingredients should be at room temperature for best results.
Sift the flour, then measure.
Resift flour with baking powder.
In a seperate bowl, beat shortening, sugar and lemon zest together until creamy.
Beat in eggs and banana.
Add the dry ingredients about 1/3 at a time, mixing to combine after each addition.
Fold in nuts.
Pour batter into the pan and bake about 50-60 minutes, until a toothpick inserted into the center of the loaf comes out clean.
Let cool before slicing.

Time total: 90 min.
