Ingredients:
1 (3 1/4 ounce) packages lemon pie filling mix
1/3 cup sugar
1 cup water
1 (5 1/4 ounce) cans apricot nectar
1 eggs, beaten
1 cup cooked rice
1 (1 ounce) container Cool Whip

Directions:
Combine pudding mix, sugar, water, apricot nectar and egg.
Cook and stir over med heat until thickened.
Cool.
Fold into cool whip and then fold in rice.

Servings: 6

Time preparation: 10 min.

Time total: 16 min.
