Ingredients:
1/3 cup milk
1/4 cup oil
1 (6 ounce) containers lemon low fat yogurt
1 eggs
1 3/4 cups flour
1/4 cup sugar
2 tablespoons poppy seeds
1 tablespoon grated lemons, rind of
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup confectioners’ sugar
3 teaspoons lemon juice
Directions:
Heat oven to 400F.
Grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
Beat milk, oil, yogurt and egg in large bowl.
Stir in remaining ingredients.
Bake 12-15 minutes.
Top with lemon glaze while warm.
