Ingredients:
4 cups diced tomatoes
2/3 cup finely chopped parsley ( , flat leaf is best if you can find it)
1/2 cup finely diced green onions
3/4 cup uncooked bulgur ( , soaked in warm water until aldente)
1/4 cup finely chopped fresh mint
2 lemons, juice of
3 -4 tablespoons olive oil
kosher salt
fresh ground pepper
1 tablespoon red wine vinegar

Directions:
combine all ingredients and let stand at room temp.
for an hour or so to allow flavors to blend.
serve with pitas.
