Ingredients:
1/4 cup V8 vegetable juice
1 1/2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon Tabasco jalapeno sauce ( jalapeno pepper sauce)
1 English seedless cucumbers, quartered lengthwise and sliced 1/4 inch thick
2 tomatoes, cut in chunks
1 yellow bell peppers, cut into chunks
1/4 cup red onions, chopped
1/4 cup parsley, finely chopped

Directions:
In a large bowl mix together juice, oil, vinegar, salt and tabasco.
Stir in cucumber,tomatoes,pepper and onion.
Place in the fridge for 1 hour,stirring often until cold.
Stir in parsley.

Servings: 4

Time preparation: 60 min.
