Ingredients:
1 (22 ounce) bags frozen mashed potatoes
1 cup milk
1 tablespoon roasted garlic
4 tablespoons softened butter
1/2 cup sour cream
1 (11 ounce) cans mexicorn or 1 (11 ounce) cans corn, drained
1 cup shredded cheddar cheese
salt and pepper
Directions:
Place frozen potatoes in a microwaveable safe bowl with the milk.
Cover.
Cook on high in microwave for 12 minutes, stirring half-way through.
When potatoes are done, whip with wire whip or electric beater.
Add the butter, sour cream, garlic, and salt& pepper to taste.
Fold in the corn.
Place in casserole dish which has been greased with vegetable oil spray.
Sprinkle the cheese on top.
Bake at 350F for 45 minutes or until heated through.
