Creamy Tofu Pasta

Ingredients:
2 tablespoons extra virgin olive oil
4 cloves garlic, chopped fine
1/4 cup finely chopped red onions
1 (32 ounce) packages soft tofu
1/2 cup water
3 1/2 tablespoons tamari or 3 1/2 tablespoons light soy sauce
1 1/2 teaspoons dried sweet basil leaves
2 cups hot cooked pasta
1/4 cup chopped fresh parsley

Directions:
Heat the olive oil in a small pan.
Add garlic and onion and saute over medium-low heat until the onion is translucent.
In food processor, blend the tofu until it reaches a uniform consistency.
Pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat.
Add water, tamari, and basil to the pan and cook for 5 minutes more.
Pour the tofu sauce over cooked pasta.
Toss well and sprinkle with parsley.
Serve immediately.
