Ingredients:
1 cup whole wheat couscous
1 cup frozen green peas, thawed
1/2 cup minced sun-dried tomatoes packed in oil, with one tbs oil
4 tablespoons crumbled feta cheese
4 tablespoons chopped fresh mint or 4 tablespoons fresh basil
salt and black pepper
Directions:
Cook couscous.
Transfer couscous to large bowl and add peas, sun-dried tomatoes, reserved oil, feta cheese, and mint.
Toss to combine.
Season with salt and pepper.
Serve warm or chilled.
