Ingredients:
2 lbs manila clams
3 tablespoons red onions, diced
3 tablespoons carrots, diced
3 tablespoons celery, diced
1/4 cup tomatoes, peeled and chopped
1 chipotle chiles, chopped
1 teaspoon garlic, chopped
1 tablespoon fresh oregano, chopped
1 1/2 cups vegetable stock
2 tablespoons butter
salt and pepper, to taste

Directions:
Clean clams to remove sand and grit.
Combine remaining ingredients, except salt and pepper.
Cover and cook over high heat until clams open.
Adjust seasoning with salt and pepper.
