Ingredients:
1 lb potatoes
1/2 lb tomatoes
2 large onions
1 teaspoon herbs
4 ounces margarine
salt & freshly ground black pepper
1 ounce margarine
1/2 pint milk
1 ounce plain flour
4 ounces grated cheese

Directions:
Preheat the oven to 375 degrees (Gas Mark 5).
Peel and slice the onions.
Slice the potatoes.
Skin and slice the tomatoes.
Place all in layers in a greased baking dish, seasoning and scattering herbs between layers.
Dot with margarine.
Cover and cook in oven for 50-60 minutes, until tender.
Make up the cheese sauce.
Remove the dish from oven and pour over the sauce, return to the oven for a further 15 minutes until golden.
