Ingredients:
2 tablespoons olive oil
2 tablespoons cider vinegar
2 teaspoons fresh basil or 1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups cooked rice, cooled
2 medium tomatoes, chopped
1 medium cucumbers, seeded and chopped
1 small red onions, chopped

Directions:
In a small bowl whisk together oil, vinegar, basil, salt and pepper.
Add rice, tomatoes, cucumber and onion.
Toss. Serve chilled.
