Ingredients:
3 1/2 lbs potatoes, peeled,cut into 1 inch cubes
1 medium onions, finely chopped
3 stalks celery, cut in half
12 cloves garlic, peeled & chopped
1/2 teaspoon salt
3/4 cup 2% fat cottage cheese, drained
1/2 cup buttermilk
3 tablespoons fresh basil, finely chopped
Directions:
Cover the potatoes with water add the celery, onion, garlic& salt.
Cook until tender (apprx 15-20 minutes).
Remove celery& discard.
Drain well through a sieve so you don’t lose the onion& garlic.
Mash the potatoes.
Combine Cottage cheese, buttermilk& Basil, add to potatoes, mix until smooth.
Reheat over very low heat.
