Ingredients:
1/2 lb grated zucchini
1 tablespoon minced onions
3 tablespoons Bisquick
1/2 cup grated parmesan cheese
2 eggs, well beaten
1/2 teaspoon garlic powder
salt and pepper
canola oil or olive oil, for skillet
Directions:
Grate zucchini.
Chop onion, add to zucchini.
Add beaten eggs, Bisquick, parmesan cheese, garlic powder, salt and pepper; mix well.
Fry as pancakes on hot greased griddle or skillet.
Serve as a side dish.
