Ingredients:
3 cups shredded cooked chicken
1 teaspoon salt
2 tablespoons olive oil
1 medium onions
2 cloves garlic, minced
1 small green peppers, chopped
1/2 cup canned tomatoes
4 cups chicken broth
1 bay leaves
1 (10 ounce) packages yellow rice
Directions:
Saute veggies in oil.
Add broth, tomatoes and bay leaf.
Bring to a boil.
Spread rice in a 9X13″ casserole pan.
Pour hot liquid over all, stir well.
Add chicken, mix.
Bake at 350F for one hour.
