20 Minute Spanish Rice

Ingredients:
2 cups chicken stock
1 cup long grain rice, uncooked
1 (1 1/4 ounce) packets taco seasoning
1/3 cup salsa
1/3 cup corn kernels
1/3 cup black beans

Directions:
Boil the chicken stock and taco seasoning in a medium pot.
Once mixture comes to a boil add the rice, salsa, corn and beans (or peas if you prefer; stir a bit.
Turn heat to low and cover pot.
Allow to cook on low, undisturbed, for 20 minutes.
After 20 minutes are up, toss the rice a bit, and serve!

Time preparation: 5 min.

Time total: 25 min.
