Ingredients:
4 sweet potatoes
2 heads garlic, tips removed
1 tablespoon olive oil
thyme
salt & pepper
Directions:
Peel and halve sweet potatoes.
Toss together with garlic, oil and a few sprigs of fresh thyme or 1 tsp of dried thyme. Salt & pepper.
Cook in roaster with pork roast.
