Ingredients:
1 large plantains, peeled and cut into chunks
2 large carrots, cut into chunks
1 medium white onions, sliced or cut into small chunks
4 teaspoons olive oil
salt
white pepper
Directions:
Preheat oven to 450F.
In a large bowl, combine all the ingredients.
Transfer them to a pan and bake for 20-25 minutes, or until the plantains are tender.
