Ingredients:
4 cups cubed potatoes
3 eggs
1 large onions, in quarters
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 cup butter
1/3 cup flour
6 sprigs parsley
Directions:
Heat the oven to 350 F, and grease a 1 1/2 quart casserole dish.
Blender-chop potatoes in cold water (a food processor also works well). Drain well.
Add remaining ingredients, cover, and process only until the parsley is chopped.
Mix the batter with the well-drained potatoes and pour into the prepared dish.
Bake for one hour, or until brown.
