Ingredients:
2 large cucumbers, peeled,halved,seeded
1/2 large red onions, sliced thinly
1/2 cup plain nonfat yogurt
1 clove garlic, peeled,minced
2 tablespoons fresh mint or 2 tablespoons fresh coriander, chopped
cayenne or paprika, for garnish (optional)
Directions:
Slice cucumber halves into thin half-moons.
Blot off moisture with paper towels.
Put veggies in a bowl.
Mix yogurt, garlic, and mint together and add to veggies.
Toss to coat.
Sprinkle with pepper, if desired.
Chill before serving.
