Steak With Blue Cheese Sauce

This steak recipe pairs New York strip or rib eye steaks with a warm blue-cheese sauce. Garlic, white wine, red pepper, and the steak pan juices are added to the sauce.
Total Time 40 minutes
Servings: 4 servings

Ingredients

  • 8 ounces blue cheese crumbled
  • 1–3 cloves garlic chopped
  • 2 tablespoons dry white wine drinking quality
  • 1 dash ground red pepper
  • 2 tablespoons unsalted butter
  • 4 small New York strip steaks or small rib eye steaks about 1 inch thick; about 2 pounds
  • freshly ground pepper
  • 1/4 cup water
  • parsley chopped; for garnish

Method

  1. In a medium skillet over low heat, combine the blue cheese, garlic, white wine, and red pepper. Stir frequently until the cheese melts. Remove from the heat and keep warm.
  2. In a large skillet, melt the butter over medium-high heat. Cook the steaks to your liking, turning only once. About 4–5 minutes per side gives approximately medium doneness, depending on the cooktop.
  3. Sprinkle the steaks with pepper, remove them from the skillet, and keep warm.
  4. Add the water to the steak skillet. Bring to a boil, stirring constantly to loosen the browned bits. Boil for 2 minutes, then stir the pan juices into the cheese sauce.
  5. Pour the sauce over the steaks and sprinkle with chopped parsley.
