Mohrengemuse (German Carrot Side Dish)

This German carrot side dish starts with carrots coated in caramelized butter and sugar. The carrots steam in vegetable broth, then finish with cream and fresh parsley.
Total Time 45 minutes
Servings: 8 servings

Ingredients

  • 1 kg fresh carrots peeled
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 1/4 liter vegetable broth hot
  • 1/8 liter heavy cream
  • salt to taste
  • white pepper to taste
  • 2 tablespoons fresh parsley finely chopped

Method

  1. Wash and peel the carrots, then cut them into thick sticks.
  2. Heat a large saucepot over low heat. Melt the butter and sugar together until the sugar caramelizes.
  3. Add the carrot sticks and stir to coat them in the caramel mixture.
  4. Add the hot vegetable broth and cover. Steam over medium-low heat for 25–30 minutes. After 15 minutes, remove the lid so the remaining liquid can evaporate.
  5. Once the carrots are cooked to your liking, whisk in the cream. Season to taste with salt and white pepper, then add the chopped parsley.
  6. Serve warm.
